Super Bowl is Sunday...
and if you are anything like me.
You'll be watching the commercials,
sipping a cocktail,
and eating good food.
But since I'm on this whole new,
healthy lifestyle kick.
I need to make some changes to what I'm eating and drinking come Sunday.
So here are some really tasty,
and skinny,
super bowl Sunday snacks and cocktails!
Skinny Beer-Garitas!

ingredients:
2 cups frozen limeade (recipe below)
2 bottles of light beer
1/2 cup tequila
Limeade:
1 cup fresh lime juice + 2 limes for zesting
1 1/2 cups of water
1/2 cup Splenda sugar blend
To make the limeade:
Zest two limes. In a large saucepan, combine water, Splenda and lime zest and heat until Splenda is completely dissolved. Remove from heat and allow to cool at room temperature. Stir in lime juice and freeze your limeade concentrate until ready to use.
To make the beer-garitas:
In a pitcher, combine frozen limeade, 2 beers and 1/2 cup of tequila. Place pitcher in the freezer overnight until frozen through, then mix so that it is in slushy form and serve. Enjoy!

Mini Taco Bowls

Ingredients:
1 ½ t chili oil (found near the Asian ingredients)
½ lb 95% lean ground beef
1 T taco seasoning
¾ c canned black beans, drained and rinsed
16 wonton wrappers (found in the produce section)
5 T + 1 t of queso dip or salsa con queso (I used Wholly Guacamole Queso Blanco)
1 c chunky salsa (I used Wholly Guacamole Medium Salsa)
1 c reduced fat shredded Mexican cheese (I used Weight Watchers brand)
Directions:
1. Pre-heat the oven to 375. Lightly mist 8 cups in a muffin tin with cooking spray and set aside.
2. Heat chili oil in a sauté pan or large skillet over medium-high heat, add the ground beef and taco seasoning and brown beef, breaking it up with a spoon. Add black beans and continue to cook, stirring occasionally, for a few minutes until warm.
3. Push a wonton wrapper into the bottom of each of the eight sprayed cups in the muffin tin. Spoon a teaspoon of queso dip into each wonton wrapper and spread across the bottom. Follow by spooning some of the meat/beans mixture into each cup (using about half the total mixture) and then splitting ½ cup of the salsa evenly into each cup. Sprinkle about half the shredded Mexican cheese evenly over the top of each cup. Press another wonton wrapper on top and repeat the layering steps with the remaining ingredients.
4. Bake for 18-20 minutes until golden brown. Let cool 5 minutes before removing from muffin tin.

Skinny Buffalo Chicken Bites

Here are your ingredients:
3 cups shredded cooked chicken
1/3 cup favorite hot sauce
3 1/2 oz. fat-free cream cheese, softened
1 cup shredded cheddar cheese
1/4 cup green onions, chopped
1/2 cup all-purpose flour (you won't use all of it)
2 eggs, lightly beaten
3 cups Corn Flakes cereal, crushed
Preheat oven to 350 degrees F. In a large bowl, combine shredded chicken, hot sauce and cream cheese; mix well. Stir in cheddar cheese and green onions and set aside. Using 3 separate bowls, set out the flour, eggs and crushed cereal. Scoop out chicken mixture and make 1 1/2-inch balls, first rolling in flour, then dipping in egg and last coating with cereal. Repeat this until you have about 30 balls.
Place balls on sheet and bake for 20 to 25 minutes, until golden. Serve with blue cheese or ranch dressing and enjoy!
Only 126 Calories for 3!!
The Game Day Chiller
This yummy drink is from the fabulous
Game Day Chiller 1 part Skinnygirl Bare Naked Vodka
1 part chilled beer
2 parts raspberry lemonade concentrate
Frozen rasperries
Mix all ingredients in a cocktail shaker with ice.
Pour into a chilled martini glass
Garnish with a lemon wedge
